What better way to refuel after an endurance boosting and strength building obstacle race training workout than with a tasty carbohydrate loaded meal that is packed with muscle building protein? This post workout meal will become one of your obstacle race nutrition “go-to’s”.

FYI: You can always adjust the amount of hot sauce to fit your style. Make this dish flaming hot or mild, the choice is yours. You can even substitute hot sauce with BBQ if you can’t stand the heat.

Obstacle Race Nutrition Grub: Sweet Potato Buffalo Chicken Casserole

Serves: 4 | Prep: 20 Minutes | Cook: 50 Minutes

Ingredients:

  • 2 lbs. boneless skinless chicken breast
  • 5 whole sweet potatoes cut into cubes
  • 1 tbsp. paprika
  • 2 tbsp. garlic powder
  • 6 tbsp. hot sauce (for medium spice)
  • 1/2 cup olive oil
  • 1 cup bacon, cooked and cut into pieces
  • 1 cup green onions sliced
  • salt and fresh ground pepper to taste

Prep:

  • Preheat the oven to 400 degrees F
  • Combine olive oil, paprika, garlic powder, and hot sauce into a large bowl and season with salt and pepper to taste
  • Add the diced sweet potatoes and diced chicken into bowl and stir
  • Empty the bowl into a casserole dish
  • Bake in the oven for 40-45 minutes stirring the ingredients every 10-15 minutes
  • Add the green onion and bacon over the dish and place back into the oven for the remaining 5 minutes
