Foods For Endurance: Post-Workout Chicken Curry Stir Fry
- 2 Tbsp. Coconut Oil
- 2 Chicken Breasts
- 1 Cup Brown Rice
- 1 Bell Pepper
- 1 Onion
- 1 Head of Broccoli
- 1 Tbsp. Smoked Peperika
- 1 Tbsp. Curry Powder
- 2 Tsp. Tumeric
- Heat Coconut Oil in a cast iron pan until “shimmery”
- Add in the chicken to cook and add the vegetables after chicken has been fully cooked
- Add another Tbsp of coconut oil
- Add in all of the spice mixture
- Throw all ingredients on top of the brown rice.
